Pholiota microspora — small amber mushrooms with a distinctive gelatinous coating. Essential in Japanese miso soup. Nutty, slightly earthy flavor. The mucilaginous cap texture is prized in Asian cuisine. Second most cultivated mushroom in Japan after shiitake. Grows on hardwood. Unique slippery texture unlike any other cultivated species.
