Maitake

Grifola frondosa — the "Dancing Mushroom" or Hen of the Woods. Large polypore growing at the base of oak trees. Prized in Japanese cuisine and medicine. Contains D-fraction beta-glucans studied for immune support and blood sugar regulation. Can exceed 20kg per cluster in the wild. Commercially cultivated on supplemented sawdust.
