King Trumpet

Pleurotus eryngii — the largest species in the oyster mushroom genus. Thick, meaty stem with a small cap. Excellent meat substitute with firm texture when seared. Native to Mediterranean and Central Asian steppe regions. Commercially cultivated on supplemented straw/sawdust. The stem is the prized part, unlike other oyster species.
