Blue Oyster

Pleurotus ostreatus var. columbinus — prized for its striking blue-grey cap color and robust flavor. One of the most cold-tolerant oyster species, fruiting at temperatures as low as 7°C. Aggressive colonizer of straw and hardwood. Popular among beginner cultivators. Color fades when cooked but flavor intensifies.
