Black Morel

Morchella elata complex — the holy grail of mycology. Honeycomb-capped mushrooms found in burn sites, disturbed ground, and old orchards. Among the most expensive wild mushrooms ($50-80/lb dried). Indoor cultivation only recently achieved commercially by Chinese operations. Nutty, earthy, deeply savory flavor. Must be cooked — toxic raw.
